Raja’s Balinese Cuisine at Nusa Dua Beach Hotel – Handwritten Collection has reopened with a refreshed concept, presenting a more refined interpretation of Bali’s culinary heritage while staying true to its cultural roots.
The transformation of Raja’s Balinese Cuisine extends beyond the menu, introducing an elegant new interior inspired by traditional Balinese aesthetics. Soft green hues, warm timber finishes, Batik and Patra Bali motifs, hand-carved gebyok doors, and guardian statues create a sophisticated setting that balances tropical warmth with timeless craftsmanship. The restaurant offers guests both indoor and semi-outdoor dining overlooking the resort’s swimming pool.
Meaning “king” in Indonesian, Raja’s embraces the idea of a royal dining experience through a contemporary take on authentic Balinese cuisine. Here, traditional recipes from across the island are thoughtfully reimagined using modern techniques while preserving their distinctive regional flavours.
Among the highlights is Segaran lan Gunung, a slow-braised beef brisket served with velvety butternut purée, rich bumbu semur, and the restaurant’s fragrant sambal bongkot. Named after Bali’s symbolic connection between the sea (segara) and mountains (gunung), the dish celebrates the harmony of the island’s landscapes and culinary traditions.
